Smoked Salmon Pancake Roll

If you love smoked salmon like me, you have the best recipe for it now. This recipe comes together in 30 minutes and can be a great brunch or lunch item for a gathering 🍽️ The pancake batter is something in betwen a dutch baby and karpatka, because of the many eggs in the batter, it works very well with a toast or on a piece of baguette :)

Ingredients for 8 servings:

100 grams of flour 300ml milk 4 egg(s) 300 grams of cream cheese 200 g sour cream 2 bunches of dill, finely chopped 200 g smoked salmon

Optional: 1 mashed avocado with lemon and olive oil

Steps:

  • Mix flour, milk and eggs together. Let the dough rest for 30 minutes. Grease a baking tray with oil, line a baking tray with baking paper, spread the dough on it and bake in a preheated oven at 225C for 10-15 minutes.
  • Mix the cream cheese well with the sour cream and dill. I did not put chives but you can definitely add, it creates a nice flavor. Season with salt and pepper. Put the baked pancake out with the baking paper onto a board and let it cool.
  • Spread the cheese mixture on top, place the salmon on top of the cheese mixture. Add the mashed avocado on top of the salmon. Roll up the pancake sheet and refrigerate for an hour at least.

Serving: Cut the roll into slices approx. 1.5 cm thick and garnish with a sprig of dill. Serve with baguette or toast.

Tip: The salmon roll can be prepared the day before. With longer cooling, the roll cuts better.
