🫑 Orzo with vegetables and feta 🫑
I sometimes fail to use everything in my fridge as I planned during the week and that is a shame 🥲 I love doing groceries but sometimes I end up with too many vegetables and have to find solutions so that they don’t go to waste. Here is my very easy and delicious orzo recipe for those unfortunate vegetables that are patiently waiting in the fridge to be used :) You can sauté any vegetables that you have at home for this recipe, feel free to change everything 😄
Ingredients serve for 3-4 people:
250g orzo 1/2 zucchini 5 mushrooms 1/2 red bell pepper 1/2 green bell pepper 2 medium carrots 2 shallot 3 cloves of garlic 400g tinned tomatoes 700ml boiling vegetable stock (or water) 200g feta cheese 3 tbsp olive oil 1 handfull fresh basil 1 tsp fennel seeds (optional) Salt and black pepper to taste
Steps: Chop all the vegetables in cubes and set aside. Add the olive oil, fennel seeds, garlic and shallots to a pot and sauté them until they are soft on medium heat. Add the carrots and peppers first because they cook the longest, after 5 minutes add the rest of the vegetables and sauté them until they are cooked, season it with salt and black pepper. After vegetables are ready, add the orzo and stir it 2-3 minutes until orzo is well mix to the vegetables. Add the canned tomatoes and mix it. Add 700ml of vegetable stock and cover the pot with a lid and cook it in low heat. Stir 2-3 times until orzo absorbs all the water and has risotto-like texture. Once, there is no more liquid, add the feta cheese and chopped basil.
