🥕Carrot-Leek Soup🥕
As the chill of autumn sets in, it’s officially soup season, and Carrot-Leek Soup is here to embrace your taste buds with its cozy, comforting flavors 🫂
3 somewhat big carrots 1 leek (white and green parts) 1lt of boiled water 1 generous spoon of miso paste 30g of butter or 3 tbsp of olive oil Salt and pepper to season
In a pot, melt butter over medium heat. Add carrots and leeks. Season and sauté for 1-2 minutes. Pour in half of the water, bring to a boil, then simmer until carrots are soft (about 15 minutes). Use an immersion blender to blend the vegetables in the pot. Adjust consistency with the reserved water ( i used 1lt of water in total and I like thick consistency in the soup). Add the miso and make sure that it blends with the soup well. Garnish it with croutons and parsley if you wish.
