โ€œThe French have been serving upย galette des roisย since the 14th-century. Traditionally, itโ€™s served on January 6th to celebrate the Epiphany, a religious feast day commemorating the arrival of the Three Kings. Today, it is simply a festive way to celebrate the new year with family and friends, regardless of religious background.โ€

Ingredients serve for 6-8 people:

2 puff pastry (store bought) 2 eggs 75 g soft butter 150 g grounded almond 80 g sugar 1 tsp vanilla extract 3 tbsp applemousse (optional)

1 egg yolk (for brushing the dough)

Steps:

  1. Preheat your oven to 200C.
  2. Mix the eggs, sugar, soft butter and vanilla extract until it becomes a smooth paste.
  3. Create holes in the puff pastry and spread the apple mousse on top, leave 2-3cm from the sides.
  4. Spread the almond paste mixture on top of the apple mousse add a bean or a little figure if you want to play the galette des rois game. I forgot
  5. Place the 2nd puff pastry on top of the first one and connect the edges with a fork, you can give a shape as you wish to the sides.
  6. With the help of a knife, create some patterns on the dough.\
  7. Brush the dough completely with egg yolk.
  8. Place the dough in the oven and cook it until the crust is golden (around 25-30 minutes).
