🫘 Sweet Potato and Butter Bean Spread 🫘

Hummus and I, WE ARE ON A BREAK! As a big fan of hummus, I became a bit tired of eating it everywhere so I decided to create something as nutritious and as delicious as hummus with creamy butter beans and sweet potato πŸ•ΊπŸ»

Ingredients:

For the spread: 150g boiled white beans 3 medium size sweet potato 3 cloves of garlic 5 tbsp of tahini 6 tbsp of yoghurt (plant-based) Β½ lemon juice Pepper and salt

For the spiced oil: 4 tbsp olive oil 1 tsp paprika 1 tbsp of sesame seeds Chili (optional)

Steps:

  1. Preheat your oven to 200C.
  2. Mix the sweet potato and garlic with olive oil and season them with salt and pepper. Roast them until the potatoes are cooked well.
  3. Put all the ingredients of the spread in a food processor/blender and blend it until it is smooth. Season it with pepper and salt as you wish.
  4. Place the spread in a plate that you would like to serve.
  5. Heat the oil in a pan, add the chili, paprika and sesame seeds. Let them cook for 10 seconds and pour it on top of the spread. Be careful not to burn it!πŸ”₯
  6. Serve it with fresh bread or crackers.
