š„Roasted Butternut Squash with Chickpeasš„
I am a big butternut squash lover and I love how versatile it is. This dish combines tender chickpeas and sweet butternut squash, enhanced by spices and fresh herbs. Itās a wholesome, plant-based meal thatās both satisfying and bursting with flavor.. as a flavour bonus I drizzled some hot honey that I made at home. Enjoooy! š¶ļø
Ingredients:
400g boiled chickpeas 600g butternut squash or pumpkin 2 red onions Spice blend of your choice - I used garam masala Fresh thym Chili if you like it hooot Salt and pepper to taste Olive oil Sour cream or yoghurt
ā¢ Preheat oven to 220Ā°C ā¢ Pat dry chickpeas with a clean towel. ā¢ On a lined tray, toss squash with 1 tsp spice, Ā½ tsp salt, thyme, red-pepper flakes, and 2 tbsp oil. Roast for 20 mins. ā¢ In a bowl, mix chickpeas, red onion, 1 tsp baharat spice, salt and 1 tbsp oil. Add to the roasting tray. Roast 30 mins more, tossing halfway. ā¢ Finish with a big dollop of sour cream or yoghurt and drizzle hot honey. You can find my hot honey recipe in the previous reels!
