🍑 Peach Cake 🍑 EN/TR (Türkçe tarif yorumlarda☺️)
The summer is ending and I am panicking if I have eaten enough summer fruits 😄 I guess this is a side effect of living in a cold and grey country 🇧🇪, you cherish the summer even more and everything comes with it. Peaches fit very well with many desserts and today I wanted to make a simple cake with them. This cake is veeeery moist and soft not so super sweet, perfect to pair with a ball of ice cream if you wish. Enjoy! 🍑
‼️Ingredients list is for 22 cm diameter round baking tin:
🍑 200g flour (all purpose or cake flour) 🍑 1 tsp baking powder 🍑 1/4 tsp baking soda 🍑 1/4 tsp salt 🍑 100 ml sunflower oil or melted coconut oil 🍑 2 eggs 🍑 120g sugar + 2 tbsp to mix with peaches (I used blonde sugar because that’s the only one I have at home right now, you can use whatever you want) 🍑 200g greek yoghurt 🍑 1.5 tsp vanilla extract 🍑 2-3 peaches
1. Preheat your oven to 180C.
2. Peel and cut the peaches in slices and mix them with 2 tbsp sugar. Mix well.
3. Mix your dry ingredients.
4. Mix all your wet ingredients well and add your dry ingredients to the mixture.
5. Place a baking sheet to your baking tin and grease it with oil. Add a bit more than half of your cake batter to the baking tin and cover it with peaches. Then add the rest of your cake batter to cover the peaches. Lastly, add some more peaches to the top.
6. Bake it in the oven for 50-60 minutes. Make a toothpick or knife test to see if the cake is well baked. If not, lower the temperature of your oven to 150-160C to make sure that your cake is bakes everywhere.
⚠️ Do a toothpick or knife test after the first 40 mins to make sure your cake is well risen.
You can sprinkle some powered sugar after the cake is cooled down 🍰
