π Creamy Chicken Piccata π
Ingredients serve for 3-4 people:
β’ 500g boneless skinless chicken breasts
β’ 5-6 tbsp flour
β’ 4 tbsp olive oil
β’ 4 cloves of garlic
β’ 250 ml of chicken broth
β’ 60 ml of light cream
β’ 3 tbsp of capers
β’ Β½ lemon juice
β’ 1 tbsp butter
β’ 4-5 tbsp of parmesan cheese
β’ 3 tbsp chopped fresh parsley
β’ Salt and pepper
Steps:
- Slice the chicken breasts in half width wise.
- Place them in between 2 large pieces of plastic wrap and pound them with a mallet until they are about Β½ cm thick. If you donβt have a mallet just borrow a hammer like me π
- Add the flour to a plate and season with salt and pepper.
- Coat the chicken breasts on both sides in the flour. Set on a plate.
- Add the olive oil to a large frying pan over high heat. Once the oil is heated add in the chicken breasts and turn the heat down to medium.
- Cook the chicken until browned and halfway cooked through and flip over.
- Turn the heat down to low and cook until it is cooked throughout.
- Remove the chicken breasts and set aside.
- Add the butter, garlic and capers to the pan where the chicken was cooked and saute for 1 to 2 minutes or until very lightly browned.
- Add in the broth and juice of Β½ lemon, add the cream. Season it with salt and pepper.
- Add the chicken breasts and cook until the liquid is half gone.
- Finish with parsley, 1 tbsp of lemon juice, parmesan and lemon slices.
- Serve it with pasta or rice.
