π± Savory Asparagus Loaf π±
Best time of the year has arrived πΈ Spring is here so is asparagus βοΈ All I can say is that you really have to try this recipe, you wonβt regret it!
Ingredients 6-8 people:
3 eggs 100ml olive oil 100ml milk 200g flour 2 tsp baking powder 250g asparagus Black olives (without the pit) 90g sun dried tomatoes 100g goat cheese 1 tbsp of herb mix (you can use thym, oregano, rosemary, paprika) 1 tsp salt
Steps:
β’ Preheat the oven to 180C. β’ Cut/break the hard bottom parts of the asparagus and cut them into 3 or 4 pieces. β’ Boil the asparagus for 2 minutes and then let them cool under the cold water. Let them aside to dry. β’ In a bowl, mix the eggs, milk, olive oil, herbs and salt. Add the flour and baking powder to the mixture. Whisk it until the batter is smooth. β’ Add the boiled asparagus, cut sun dried tomatoes, olives and goat cheese. Mix until everything comes together. β’ Grease a baking tin with olive oil and place a baking sheet in it, grease again. β’ Bake the loaf 40-45 minutes until it is golden and/or it comes out clean from a toothpick or knife test.
