π Orange Olive Oil Cake π
First I was also sceptical, olive oil in a cake? Really? Now, I am obsessed!
For the cake:
3 eggs 220g sugar Zest of 2 oranges 5 cardamom pots or 1 tsp cardamom (optional) 120g extra virgin olive oil 1 tsp vanilla extract Freshly squeezed orange juice (from one medium orange) 1/4 tsp baking soda 1 tsp baking powder 250g all purpose flour 1/2 tsp salt
Tip: When you crush the cardamom, remove the skin once the pods are open and keep grinding.
For the top of the cake:
Peeled and sliced 3 medium sized oranges Juice of 1/2 orange 3 tbsp of sugar
Steps:
β’ Preheat your oven to 175C. β’ Zest the oranges and mix it with sugar, massage it until orange zest gives all its color and oil to the sugar. β’ Add the crushed cardamom and salt to the sugar and zest mixture. Add the eggs and whisk it until it is smooth and fluffy. β’ Add the vanilla extract, olive oil and orange juice to the mixture and whisk it more. β’ Add the remaining dry ingredients (flour, baking powder and baking soda) and mix with spatula until they are all well incorporated to the wet ingredients (donβt over mix it). β’ Peel and slice the oranges (I used 3). Place a baking sheet in the bottom of your cake tin (24-26 cm diameter) and grease the side of the tin with oil or butter. Then pour the juice of 1/2 orange and sprinkle 3 table spoons of sugar evenly to the bottom of the cake thin. Place the orange slices to the bottom of the tin and cover it completely. β’ Pour the cake batter on top and bake it 35-45 mins until the top of the cake is golden and toothpick test is successful :)
