Moist Lemon Cake

Last spring I spent 2 weeks in Istanbul Moda and every morning we went to the same coffee shop for the breakfast. We ate a lemon cake very similar to this one there and instantly it became our favorite. This lemon cake is moist and rich in flavor, I am sure it will be your favorite too if you like citrus šŸ‹

Ingredients:

For the cake: 225g flour 1 tsp baking powder Ā½ tsp salt 175g melted butter 150g sugar 3 eggs 1 fresh lemon juice Zest of 2 lemons 175ml milk 2 tbsp poppy seeds (optional) 1 tbsp vanilla extract (optional)

For the lemon sauce on top:

1 lemon juice 60g of sugar

Steps:

  • Preheat your oven to 180C.
  • Mix the sugar and lemon zest, massage the mixture so the essential oils in lemon zest can come out and mix it with sugar. Add the eggs and whisk it until the mixture is light and fluffy.
  • Add the lemon juice and melted butter.
  • Mix the dry ingredients (flour, baking powder, salt) and add half of it to the mixture.
  • Add the milk and rest of the dry ingredients.
  • Optional step: Add the 1tsp vanilla and 2 tbs of poppy seeds.
  • Grease the cake form with butter and cover it with thig layer of flour so it does not stick.
  • Bake for 30-40mins or until a toothpick inserted into the centre of the cake comes out clean.
  • Let it cool completely and pour the sauce before unmoulding.
