Pasta Pistachio 🌿 (Türkçe tarif yorumlarda ☺️)
This summer, I had the pleasure of visiting both Sicily and Greece, and the incredible food I enjoyed there has left a lasting impression on me. It was particularly interesting to discover that Sicilians, much like us in Gaziantep, also appreciate the use of pistachios in their cuisine.
Now, I’d like to share a simple yet delicious pasta recipe that requires just a handful of ingredients. You’ll be pleasantly surprised by the wonderful flavors this dish offers.
Ingredients (serves 2):
200g of your favorite pasta 120ml of heavy cream (with 35% fat content) 50g of pistachios (plus extra for garnish) 40g of grated Parmesan cheese 50ml of pasta water 2 tablespoons of olive oil 1/2 onion Salt and pepper, to taste
Steps:
Begin by dicing the onion into small pieces.
Boil a pot of water with a generous pinch of salt and cook your pasta. Be sure to cook it for 2 minutes less than the recommended time on the package because we will continue cooking it with the sauce later on.
Next, chop the pistachios into small bits and lightly roast them in a pan.
In a large pan, heat 2 tablespoons of olive oil and add the diced onions. Cook them until they become soft.
Add the roasted and cut pistachios to the pan and stir until they are well combined with the onions and oil.
Pour in the heavy cream and add the grated Parmesan cheese, add some pasta water if the sauce is too thick.
Season the mixture with salt and pepper according to your taste.
Transfer your slightly undercooked pasta to the pan with the sauce and continue cooking until the pasta absorbs the sauce and is cooked.
Before serving, garnish your pasta with additional pistachio pieces for an extra burst of flavor and texture.
