Apple Butter Cookies š
For the apple filling:
4 medium size sweet apples
3 tbsp of sugar
1 tsp cinnamon
For the dough:
150 g butter (at room temperature)
90 g of sugar
1 egg
1 packet of vanilla sugar or 1 tsp vanilla extract
Ā½ tsp of baking powder
300 g plain flour
For covering the cookies: powdered sugar
Steps:
- For the filling of the apple cookies, peel the apples and grate them into a suitable pan.
- Add sugar, cinnamon and cook without adding anything else.
- After apples have released their juices and all the juice is gone, turn off the stove and take the apples in a separate bowl to cool.
- Knead the dough by adding butter, sugar, egg, vanilla, baking powder and flour slowly into a suitable bowl for our cookie dough. Ps: Add the flour slowly until the dough comes together in a non sticky texture.
- Divide the kneaded dough into 3 parts and take 1 part and open it by flouring it from time to time with the help of a rolling pin.
- Cut the dough into rounds with a cookie cutter (you can use a glass as I did).
- Put 1 teaspoon of our apple filling into the dough and bring the edges together firmly.
- Continue this process until all the dough isfilled with apple filling and take the shaped cookies to the (greased/cooking paper) tray.
- Bake the cookies in the oven at 175Ā°C for 20 minutes until they are slightly golden.
- Sprinkle powdered sugar after the cookies are cooler.
