Kaki (Persimmon/Hurma) Bread 🧡

Kaki is my favorite winter fruit, when I see it on the market it takes away the autumn blues and replaces it with happiness â˜ș Therefore, I wanted to pay my respects to kaki with this recipe😂

Ingredients for a 16 cm baking tin:  200 g flour  1/2 tsp salt 1.5 tsp baking powder  1 tsp cinnamon  1/4 tsp ground nutmeg 1/4 tsp ground cloves (2 grounded cloves) 2 eggs at room temperature 1/2 tsp vanilla extract or one package vanilla sugar  40 g melted butter, plus more for greasing your baking tin  40 ml tahini paste  150 g sugar  50g walnuts 1 very ripe kaki (persimmon), pulp without the skin  1 hard kaki to decorate the bread 

Steps: 

  1.    Preheat your oven to 180°C (conventional oven with fan). 
  2.    Mix all the dry ingredients (flour, salt, baking powder, cinnamon, nutmeg, and cloves). 
  3.    Mix all the wet ingredients with sugar (eggs, sugar, vanilla, butter, tahini). 
  4.    Mash the ripe kaki without its skin. 
  5.    Mix all the ingredients together (dry, wet, walnuts and kaki pulp). 
  6.    Grease and flour your baking tin. 
  7.    Pour the kaki bread batter in your baking tin. 
  8.    Decorate the bread with thinly sliced kakis. 
  9.    Place your baking tin in the oven and bake it for 45–55 minutes, until a knife inserted into the centre comes out barely clean. Don’t overbake it to keep the moist texture! 
  10.    Cool the bread completely after it comes out of the oven.  Voila! Your breakfast kaki bread is ready!
