Savory Scones with carrot, zucchini and cheese
520g self-rising flour + some for dusting 1 tbsp baking powder 1 tsp salt 100g veeeeery cold butter in cubes 250 ml whole fat milk 1 egg 1 carrot - grated 5g dill finely chopped 1/2 zucchini - grated and squeezed to get rid of its water 25g parmesan grated 40g comte cheese in little cubes Some milk to brush the scones before placing them to the oven.
Steps: 1. Mix the dry ingredients (flour, salt, baking powder). 2. Add the veeeery cold butter in cubes and start incorporating to the dry ingredients with your finger tips. 3. Add the veggies (carrot, dill, zucchini). 4. Whisk the milk and egg together. 5. Make a well in the flour and add the milk and egg mixture. 6. Start mix the dough but PLEASE avoid kneading. Just mix it until the dough comes together. We want flaky scones and to avoid developing gluten we should knead/mix as little as possible. 7. Dust your surface with flour and place your dough. Roll out your dough until it is 1.5-2 cm thick and cut it in rounds with a help of cookie cutter. 8. Place the scones to the baking sheet and brush it with milk wash. You can garnish it with parmesan or sesame seeds as well as leaving them naked. 9. Place your baking sheet to the preheated oven (180C) for 20 minutes or until they are golden.
⚠️ when you cut the dough with cookie cutter, place them upside down to the baking sheet, this will help your scones to rise properly, some baking scienceeee.
