Filo pastry (börek) with butternut squash and feta
I think börek is my favorite snack from Turkey, however finding the right dough in Belgium is a challenge. Filo dough is a great alternative and you can make filo pastry by using all kinds of fillings and create your own version. I love butternut so I take every opportunity to use it and voila today we have butternut börek 😋
Ingredients serve for 4-6 people:
• 8-10 sheets of filo pastry
• 1 kg butternut squash
• 200 g feta cheese
• 200 g emmental or any cheese that you like
• 2 shallots
• 2 cloves of garlic
• 50ml of milk
• Olive oil, salt, rosemary, paprika and pepper
For the top:
• Black sesame seeds
• 30 g melted butter
- Roast the butternut squash together with the garlic and onions in the oven. Once they are cooked well, mash them together. Season it with rosemary, paprika, black pepper and salt. Add the feta and emmental cheese, mix all together well.
- In a small bowl, mix the milk and the olive oil. Take one sheet of filo dough and brush its surface with milk and oil. Take another filo dough and place it on top of the other one. Put your filling to the longer side of the dough and roll it completely. Repeat this four to five times until your filling and the dough is finished.
- Place a baking sheet on your oven tray and give a snail shape to the rolled filo doughs. When all the dough is done, brush it with melted butter and garnish it with black sesame.
- Heat your oven to 180C. Bake the filo pastry in the oven until it is golden (~30 mins).
