🥙 Middle Eastern Nachos 🥙
I love Levantine cuisine. As someone from Gaziantep, the familiar flavors of the Levantine cuisine makes me feel at home in Belgium. I keep some of the main ingredients in my cupboard to create quick dishes with lots of homely flavors. Recently, I was thinking if I could do something different with my leftover labneh and old Lebanese bread and this recipe came together. It is colorful and crunchy. I hope you like it.

Ingredients:
For the topping:
- 1 large eggplant
- 15 cherry tomatoes
- Olive oil, salt and pepper
For the spread:
- 300g labneh
- 3 tbsp tahini
- 1 tbsp zaatar
For the chips:
- 2-3 Lebanese flat bread
- 2 tbsp of olive oil
- 2 tbsp zaatar
Steps:
- Cut the eggplant in cubes and tomatoes into two. Cover them with olive oil and season them with salt and pepper. Place into an oven safe dish and cook them until they are tender in the preheated (200C) oven.
- Mix labneh, tahini and zaatar in a bowl.
- Cut the Lebanese bread into small pieces and place them onto a baking sheet. Cover them with olive oil and season them with zaatar. Toast the breads in the oven until they are golden and crispy.
You can put the bread in the oven together with eggplants, keep in mind that bread will cook faster than the eggplants.
- Take a deep plate and place the labneh mixture as the first layer. Put the eggplant and tomato mixture on top. Garnish the plate with Lebanese bread chips and add the pomegranate on top of the dish. Garnish it with more zaatar if you want.
