π Toast with plums and whipped ricotta π
Isnβt it great that anything can be put on a toast? π I love toast, especially when my bread is almost burned crunchy β€οΈβπ₯ It has been non-stop raining in Brussels and we all are craving for the warmer and sunnier days. When I feel that the weather is pulling me down, I pull myself up with bringing colors to my life. Easiest way of doing that for me is buying beautiful flowers πΊ and adding more fruits/vegetables ππ₯to my day. I am sharing the recipe with you but the toast business is fun business π₯³ so just improvise with the ingredients that you have at home and create your own versions πΊπ»
Ingredients serve for 1 person:
For whipped ricotta:
3 tbsp of ricotta cheese 2 tbsp of plant-based milk 1 tsp of lemon zest 1 tsp of lemon juice 1 tsp honey or maple syrup (optional) Salt
For the toppings: 2 plums 1 tsp sugar (optional if your plums are already sweet) 1 tsp olive oil 1 tbsp honey or maple syrup Arugula (or green of your choice) Cashews (or any nuts you like)
Steps: β’ Whipped ricotta: Whisk all the ingredients and season it with salt and pepper for your taste. Set the mixture aside. β’ Plums: Slice the plums and heat a pan. Add the olive oil and sugar to the bottom of the pan. Place the sliced plums on the olive oil and sugar mixture, cook both sides 1 minute until they are softer. Place the whipped ricotta on your bread, add some greens (arugula) and add your plums. Garnish it with some more honey or maple syrup and nuts.
