One-pot baked gnocchi 🥦

One-pot baked gnocchi 🥦

Ingredients serve for 3-4 people:

1 tbsp butter 1 tbsp olive oil 1 onion 1 small red paprika 2 tbsp flour 400 ml milk 1tbsp mustard 150g grated cheese (cheddar or emmental) 250g frozen broccoli 150g frozen peas 10 cherry tomatoes, cut in halves 500g store bought gnocchi Salt and pepper

Steps:

• Preheat the oven to 200C. • Heat the butter and oil together in a shallow, flameproof casserole over a low heat. Add the onion and paprika, cook for 5 minutes, stirring regularly until softened. • Sprinkle over the flour and stir well then gradually add the milk, just a little at a time, stirring well between each addition to make a smooth sauce. Stir in the mustard and half of the cheese. Season to taste with salt and pepper. • Stir in the gnocchi, broccoli, peas and tomatoes and bring to a simmer, stirring. • Sprinkle over the remaining cheese and bake in the oven for 12–15 minutes, or until golden-brown and bubbling. Carefully remove from the oven and serve.

💡 Tip: If you don’t have an oven-proof casserole, after cooking your gnocchi in a normal pot, pour it to the any dish that is oven proof and sprinkle the cheese. Bake it 12-15 minutes.
