🍤 Yellow Curry with Leek and Shrimp 🍤

🍤 Yellow Curry with Leek and Shrimp 🍤

(~30 mins cooking time)

Ingredients serve for 2 people:

2 tbsp cooking oil 1 leek 15 cherry tomatoes 2 cloves of garlic 1 tsp of grated ginger 1.5 tbsp thai yellow curry paste (you can adapt it for your taste) 250 ml coconut milk Some coriander (you can skip this if you hate it 😅) 200g of peeled shrimps (you can replace it with any source of protein)

Steps:

  1. Thinly slice the leek and garlic, grate the ginger.
  2. Put the cooking oil in a big pan and add the leek, cook it until the leek is soft.
  3. Add the garlic and ginger to the pan, cook it for 5 minutes.
  4. Add the yellow curry paste and cook it for 2 minutes.
  5. Cut 10 cherry tomatoes into two and add them to the pan, cook it for 2 minutes.
  6. Add the coconut milk to the pan and cook it until all the vegetables in the pan are soft.
  7. Season it with salt and pepper according to your taste.
  8. Add the shrimp last and cook them for 5-7 minutes. (Cook the shrimps for 8-10 minutes if they are frozen.)
  9. Serve it with rice and garnish it with fresh coriander and cherry tomatoes.
