No Bake Cheesecake Cups 🍧

I baked at least 20 cheesecakes in the last month for my donation project. When you have guests or have people to share, it is great to bake a whole cake but what if you are alone and you are craving for some cheesecake? Here is my solution to that - super easy no bake individual cheesecake cups and it takes max. 15 minutes to prepare! πŸ™†πŸ»β€β™€οΈ

We had ours with my bf for breakfast and it was great 🀭

Ingredients serve for 2 regular sized cups:

For the bottom: 50g petit-beurre or speculoos (biscoff) biscuit

For the cheese filling: 150g cream cheese (philadelphia) 120g heavy cream 2.5 tbsp powdered sugar 1 tsp vanilla extract 1 tsbp lemon juice

For the raspberry coulis:

50g frozen raspberries (you can replace raspberry with any other red fruit) 1 tbsp sugar 1 tsp lemon juice 2 tbsp water

Steps:

β€’ Put the biscuits in a zip lock bag and crash them with something heavy. I used a roller pin β€’ Mix the cheese with cream, sugar, vanilla and lemon juice and get a smooth filling. Set aside. β€’ In a small pot, mix the raspberries, sugar, lemon juice and water. Cook it on medium heat until the raspberries are softened and the sugar is very well incorporated to the mixture. Set aside and let it cool down. β€’ In a glass or dessert cup, add the biscuits as the first layer, then add the cheese filling and lastly add the raspberry coulis when it is cold. β€’ Keep it in the fridge and let it cool at least 3-4 hours. Garnish it with fresh fruits and biscuits before serving.

I recommend to eat in the same day when the biscuits in the bottom still have a crunchy texture. The next day is also fine β˜€οΈ
